Dismal Harmony Distilling: Where Science Meets Art in Morristown, NJ
Step into the intriguing world of Dismal Harmony Distilling in Morristown, New Jersey, where the creation of fine spirits is approached as both a scientific pursuit and an artistic endeavor. Founded by Bob Dillon, a “tech guy” with a background in mechanical engineering and a passion for understanding how things work, Dismal Harmony is dedicated to crafting high-quality spirits designed for exceptional cocktails. While an exact public founding date isn’t widely advertised, Bob Dillon presented his plans to the Morristown zoning board in December 2021, indicating the distillery’s public-facing journey began around that time.
Key Features that Elevate the Experience:
- A Scientific Approach to Spirits: Bob Dillon’s background shines through in their meticulous approach. They aim to understand the science behind liquor, ensuring precision and quality in every batch, from grain to glass.
- Artisan Cocktails: Dismal Harmony isn’t just about the spirits themselves; it’s about the magic they create in a cocktail. With a “brilliant mixologist” like Robby Seibert (formerly of Gladstone Tavern) on staff, their cocktail menu is a testament to creativity and balance. Expect deeply delicious and innovative concoctions that transcend their individual ingredients.
- Diverse and Unique Spirit Offerings: Their in-house distilled spirits form the backbone of their offerings:
- Whiskey & Bourbon: Look for lightly fruity whiskeys with hints of chocolate, and bourbons with oak and toffee notes, designed to be savored neat or in a cocktail.
- Ultra-Smooth Vodka: Their vodka is noted for having actual flavor, setting it apart from typical neutral spirits.
- New Jersey Tea Gin: A truly unique gin that goes beyond traditional herbal notes, offering hints of fragrant tea, flowers, and exotic spices.
- Intensely Flavored Liqueurs: Inspired by centuries-old European aperitifs, their quintet of liqueurs includes:
- Francia Amaro: Named after Bob’s maternal grandmother, this amaro is subtle and cocktail-ready.
- Libertasse: A bright, orange-forward liqueur akin to triple sec, with mandarin orange and Moroccan lemon.
- Joe D’s Limoncello: Praised for not tasting like a “yellow lollipop,” offering a more refined limoncello experience.
- Monk Herbal Liqueur: Evoking Chartreuse with sweet herbs and a “gloriously green garden of delights.”
- Vidisha’s Masala: A stunningly original liqueur redolent of perfumed brown spices, named after a family friend’s spice mixture, and recently swept the 2025 American Craft Spirits Association Spirits Competition.
- Intimate Tasting Room Experience: Patrons can enjoy their spirits and cocktails in a welcoming atmosphere. While food isn’t sold on premises, guests are welcome to have it delivered from nearby Morristown restaurants, further enhancing the dining and drinking experience.
- Commitment to Quality Ingredients: They are determined to make the best ingredients for the best cocktails, emphasizing the journey from grains and plants to the final drink.
Regular Events:
While Dismal Harmony’s website doesn’t explicitly list a consistent schedule of weekly events like trivia or open mic nights, their focus is on providing a premier tasting and cocktail experience during their open hours. They are known to host:
- New Spirit & Cocktail Releases: Keep an eye on their social media and website for announcements of new spirit offerings or seasonal cocktail menus.
- Tastings and Guided Experiences: Given the nature of a craft distillery, it’s likely they offer structured tastings or tours, particularly for first-time visitors as required by state regulations.

This place is pretty far from our home in South Jersey and I wish it wasn’t. Parking was a little tricky as you have to park at the public lot around the corner, but if you are local you probably already know about it. When we walked in we were greeted right away and offered seats at the bar which is exactly where we wanted to be. A bar crawl group was just leaving so the atmosphere at the bar was perfect.
I got a flight and my wife ordered a drink. My flight had the Gin, Franca Marcia Milano, Masala and The Monk. The Gin was great. It was nice and light and I could definitely enjoy some summer drinks with it. The Francia was terrible at first… It reminded me of a bitter sweet tea. I kept trying to place the nose and taste, but that’s the best I could come up with. After a few tastes I wouldn’t say it was terrible, but very unique and complex. I guess it’s just not my style, but it did have me thinking long and hard about it. The Masala without a doubt told you exactly what it was before you checked which one you were sampling. That one to a tee let you know about it’s indian spices. I’m not sure where I’d use it, but I bought a bottle because I’ve never had anything like it before.
The Monk is their take on Chartreuse. Chartreuse has suck a cool story behind it and I’ve never heard anyone other than me mention it anywhere. When I first bought a bottle of chartreuse I was a little disappointed, but I was not disappointed by Monk. It’s a bit more minty than chartreuse, but I like it so much more.
Overall this was a great visit and I definitely recommend checking them out.
